Sweet & Spicy Super OIympic Wings

Sweet and fruity with a surprisingly spicy kick! A blend of a delicious local ingredients gives these wings their fantastic, complex flavor.

Sweet & Spicy Super OIympic Wings Recipe

Cook time: 45 min plus 1 hour marinating
Servings: Serves 6

Ingredients

  • 3 lbs. chicken wings
  • 3 tbs. low sodium tamari
  • ½ cup LeRoux Blackberry Ginger Balsamic Vinegar**
  • 1/3 cup LeRoux Garlic Extra Virgin Olive Oil** plus 2 tbs.
  • 2 tbs. Col. Pabst Worcestershire Sauce**
  • 2 tbs. Captain Mowatt’s Blue Flame Hot Sauce**
  • ½ cup Captin Mowatt’s Bar Harbor-Que Sauce**
  • 2 tbs. freshly grated ginger
  • 2 tbs. honey**
  • 3 tbs. Maine Homestead Hot Pepper Jelly**
  • 1 tsp. freshly ground black pepper
  • Add ½ tsp. red pepper flakes for even hotter wings!

Instructions

  • Combine all ingredients except the wings in a large bowl, whisk together until thoroughly blended. Reserve two portions of marinade: ½ cup for glazing and ½ cup for dipping. Set aside.
  • Add the wings to the rest of the marinade and refrigerate at least one hour, turning them occasionally to ensure they are marinating evenly.
  • While the chicken is marinating, line a sheet pan with aluminum foil and place a baking rack on top of the foil. Brush the 2 tablespoons of reserved garlic olive oil onto the rack of the sheet pan.
  • Remove the chicken from the fridge and allow it to come to room temperature while preheating the oven to 400 degrees.
  • Remove the wings from the marinade and place them evenly on the baking rack and bake for 20 minutes. Discard the remainder of the refrigerated marinade.
  • Continue baking, brushing the wings with the reserved glazing marinade and turning every 5-10 minutes. The wings are done when a nice glaze has formed on the surface.
  • Serve with the reserved dipping marinade and enjoy!
