Eva’s Roasted Tomato Sauce
Featuring our customer favorite Garlic Olive Oil, this simple roasted tomato sauce is a great way to use up a hearty helping of tomatoes. The result is a couple pints of lovely marinara!

Eva’s Roasted Tomato Sauce
Servings:
One 9” x 13” pan cooks down to approximately 2 pints of finished sauce.
Ingredients
- Tomatoes – use a mix of San Marzano, cherry tomato or slicer varieties. Enough to generously fill your pan
- 1 yellow onion, coarsely chopped
- Garlic – 3-6 cloves, peeled
- Basil sprig
- Bay leaf
- LeRoux Garlic Olive Oil**
- Salt**
Instructions
- Preheat the oven to 400 F
- Cut the large tomatoes into quarters. Place all ingredients in a 9” x 13” baking pan or a 3.5Qt Braiser. Mix until the tomatoes are coated in oil. Tuck the herbs and garlic underneath the tomatoes.
- Roast at 400 F for 30-45 minutes. Stir every 15 minutes or so. The cooking is done when the tomatoes have released liquid and thickened. The edges of the tomatoes and onions will be darkened.
- Let the sauce cool in the pan and then process through the medium disk of a food mill to remove the seeds and skins. After milling, test for seasoning and add salt or a pinch of sugar to taste.
