The heritage and aesthetic of the traditional bucket sap collection is part of the appeal, but more than that it's a matter of quality control. Each time they gather, they’re able to inspect the sap in ways that plastic tube collection doesn’t allow. They’re on the hunt for clarity and freshness, and if the sap’s not right, it doesn’t get used. The small batches of fresh sap are then boiled slowly on a wood-fired evaporator, infusing the syrup with a hint of wood smoke. The longer simmer ensures maximum flavor.
